Jean is always prepping food for eg Potluck, Annual Fundraiser, church or community event.  Cooking is her PASSION… Her dish was fantastic – nothing but rave reviews and compliments throughout the event or her private home dining.

  1. What is the secret to a good stew?
    o Right type of cuts – good for slow cooking, here Jean is using Beef Knuckle, a much leaner meat. Alternatively, you can use brisket or shin shank.
    o Browning – this is a MUST, to start building the flavour base of your stew, it gives body and aroma to it.
    o Caramelize the onions – deglaze with stock bit by bit and scrape, scrape, scrape… you want all the good brownness on the bottom.
    o Over a low simmer – Cook your stew in slow cooker, on the stove or in the oven (between 150°C – 170°C) for a couple of hours
