Potluck II-Homecooked Desserts n Finger foods Potluck

All righty! The sequel to the first Homecooked Potluck will be happening sometime next month!

This time round, it’s all homecooked specialty desserts and finger food. Now before everyone starts bringing in ordinary desserts like green bean soups or yiou tiow or simple agar agar or soon kuay, I want to emphasize that the item has to be different from those stuff that can be easily obtained from food centres.
For example, if it’s going to be yiou tiow, it has to be something extraordinary that is made with it, or if it’s going to be agar agar, there must be something unusual about it, not just simple coloured and flavoured agar agar.
It would be good if potential participants can come up with a suggestion of two or more items which will be made into a ‘menu’.

Since it’s desserts and finger foods, please ensure that everyone gets a bite of each item.

Date : 21st November 2009 

Time:  3 pm to 7 pm

Venue: My Place in Pasir Ris,St 52 (off Drive 1 or Drive3).  

It’s open to both sexes, but if participants are coming as a couple, each person has to present an item.

I have a mahjong table and cards, so we could have some games if anyone is interested, but keep in mind that theses are secondary activities to the main agenda, which is eating, sharing recipes and socialising.

  1. The first potluck was so enjoyable that there were requests for a sequel, so here it is, a dessert and finger food potluck!

    Lydia Chin has kindly offered her Condo’s multi-purpose room for our use and it comes with a karaoke set! So there will be more singing. :-)

    Last Saturday, Jane Loh was the first to ‘chope’ her dessert, rojak, hahaha, talk about enthusiasm!

    I think Patrick Chan may come up with some kind of special dumpling, am I right Patrick?

    I haven’t decided yet what to make but I have in mind a few items to choose from.

    So, ladies and gentlemen, yes, gentlemen, too, register quickly as it’s again on a first come, first served basis. Only 20 places to begin with but we may increase it if the venue is big enough. Got to check it out first.

    Guys, if you can’t make the item yourself, I will accept it if it’s made by your better half or your maid, but it has to be yummy, like Dan’s trifle and Joy’s Apple crumble.

    Again, couples may come together but both have to bring an item each and both must be SHC members.

  2. I also want to compliment Eileen’s special fruit salad, which was a hit with everyone. Lilian Teo’s corn pudding was another taste bud pleaser. In fact, all the desserts were fabulous, that’s why the request for a dessert potluck.

    To avoid having only sweet things, I’ve included finger foods, which could be savoury or salty to add some balance to the menu.

    Assuming it falls on the 28th Nov. , I will “chope” first to prepare my favourite Thai glutinous durian /mango rice dessert.

  6. I am a new member to silverhairs club. If my husband is not travelling, he will be attending with me.

    We will bring Baked Pita bread stuffed with feta, cheddar, eggs and yogurt. The second dish will be Stuffed Chicken wings with prawns n minced pork.

    I just received a phone call from Lydia Chin, who had been very insistent that we used her place for our gathering.

    I’m afraid miss Lydia Chin suddenly ‘discovered’ that she had ‘forgotten’ that she had singing on Saturdays and wanted me to tell everyone to switch to Friday the 27th to suit her, so that she could do her singing!

    It obviously didn’t occur to her that there are people still working at that time on a Friday!

    I know I sound annoyed as indeed I am, as she had repeatedly assured me that the multi purpose room would definitely be available on the 21st. She even wanted me to state specifically on the post that it was definitely available.

    Hence, the venue is still to be determined.

    I wonder if Nina Choo’s home is still available for our gathering? If not, can anyone help?

    any ideas of a venue? A chalet? My place at Pasir Ris (which many think is so far away, hahaha)?

    Patrick Chan suggested getting a chalet and we split the cost.

    I don’t mind hosting, but just the mention of Pasir Ris and some people think I’m living at the end of the world, hahaha.
    In fact, it is very easy to get to. It’s the last station on the EW line and there are several connecting buses to my place from the bus terminus nearby.

    What do you think? Please give me your feedback.

    You are very smart to ask me to cook 2 dishes.

    However, the wasebi prawns take a bit longer time and more
    steps to prepare. So I was thinking of preparing a double
    portion and cook only 1 dish.

    Is that ok?

    Btw, this recipe is from the Tung Lok group of restaurants
    & I’ll make myself a guinea pig first before bringing it
    to your party.

    I have decided to hold this session at my humble abode.

    I’m at Pasir Ris Street 52, off Drive 1 or Drive3.

    Those who drive can access Street 52 from either Drive 1 or Drive 3. Look out for Elias Primary School. Take the entrance to the carpark,located beside the school and follow the signage to the multistorey carpark for block 513. I will give out my exact address later by email, so I will need you to drop me an email at MeiliiX@gmail.com .

    Those who are not driving,catch the EW train and drop off at the last station, at Pasir Ris. Then catch either bus #3 or #403 to Drive 1.

    Bus #3
    Upon exiting the train gantry, take the right exit and follow the walkway to the bus stop to catch #3. Counting the stop you board as #1, drop at the 4th stop, (B15).

    Alternatively, exit the train station and walk to the bus terminus nearby and catch #403, which is a loop service and drop off at the 4th stop (B15).

    Upon alighting, cross the road to block 515. Walk straight ahead to my block at 513, about 100 m away.

    If you prefer, you could take a leisurely stroll by the Sungei Api Api, which is right next to the apartments.

    I will put up the directions again nearer to the date.

    Seriously though, if Susan is coming, she will have to bring a dish too.
    When you say double portion, do you mean that everyone will get 2 pieces instead of one piece each?

    In yr post, you mentioned portion should be enough for 8.
    So I presume the dish size would be the same no. of prawns
    (medium size). But since you are opening up to 20 ppl, it
    seem there could be a mismatch if everyone is going to eat
    the same dish. Somebody may have to eat the plate if that
    dish turns out to be too ‘sedap-sedap’, haha.

    So to solve that problem, I’ll cook over 20 prawns so that
    everybody can have a go. Some may even have 2 servings.

    …..

    Provided, of course, I survive this recipe from Tung Lok
    (not so much of their formula, which I trust, but rather
    ‘cos of my ‘clumsiness’)

    Btw, can I presume you have a microwave at home? I just need
    it to warm up the dish before dipping into the sauce.

    It’s very generous of you to cook so many prawns! I have faith in you. If you dare to do a ‘Tung Lok’ dish, you must be a really good cook.

    Yes, I have a microwave oven. Would Sharp be ok? ;-)

    Yummm, I love wasabi prawns. (Is that a strong enough hint to not change your mind about making that?) Hahaha.

    First of all I wish to thanks the EO & Eileen for offering her place for the potluck.Every one of us put in effort to prepared all the dish n it is much better than catering foods.I rather have a yummy potluck session anytime.Thanks to Andrew for taking all the pictures & Patrick Chan for providing transportation for my convenience to and fro.

    Eo Mary, May be I will prepare the longan tou foo as a dessets for this coming event. I don’t really know how to prepare the dessets but only know how to enjoy them. Hahaha… If possible don’t arrange on 27 Nov(Fri)so that I will not miss out the opportunity to attend this gathering.

    Sorry to take so long to response to your post. Since my kids are all grown up & I have not been cooking for so long and if I ever cooked, it is the simple food for myself. I happened to be chopping up a pc of lean meat and suddenly, it struck my mind to contribute a simple finger food, fried wanton. Receipe will be provided later on. Is it OK? If not, I have to crack my head again and I do not know what else to contribute. If nearly the date, I have nothing to come up with, either James Tan double up his washibi prawn or I will have to give it a miss.

    Frankly, konnyaku jelly is very easy to make, especially with the instructions given on the all in one sachets.
    Can you come up with something less common please?
    You could bring the konnyku jelly as an extra if you want to.
    Remember we want to share the recipe of the item you make.

    I met Mary Chan at the flea market and then realised that I had forgotten to submit my share of the recipe in Rosalind’s Homecooked Pot Luck @ Eileen’s.

    For those who would like to cook this “spice-up” version fragant bak kut teh, pls.refer below.

    Herbal Pork Rib Soup :- ( Steven Chan’s Version )

    Ingredients:-
    500g of fresh bak kut ( pork ribs )
    Chinese Medicinal Herbs
    i) Gui Zhi ( cinnamon twigs ) ii) Dang Gui (Chinese Angelica Root )

    iii) Dang Shen (Codonopsis) iv) Gou Qi (Wolfberry fruit /Gojiberries )

    v)Shou Di (Rehmannia root) vi) Xiang Liao ( translate ? )

    Preparation

    a) Bring to boil 1litre of water in a pot.

    b) Add in the cleanse pork ribs portions and stirred gently with a spatula for abt 1 min. This will help to remove excess fats and blood and also to prevent the nutritious juices from the pork ribs from “leaching” out if it is boiled for too long. Filter off the water from the pork ribs and transferred them on to a plate. Add into another pot of 1 to 1.5 l of boiling water, the pork ribs and all the Chinese herbs which are placed on top of the pork ribs.

    c) Add another 5 to 8 of (dried thick round-skinned Japanese Shitake )mushrooms which have been soaked and cleaned separately and another 5-10 pieces of dried scallop meat and 10-15 pieces of “cracked” white peppercorn pellets.

    d) Add in another 5 to10 segments of freshly peeled raw garlic and occasionally gently stir the soup after every 15 mins.

    e) Simmer for another 1 hr. using low heat. Serve when meat is soften and cooked.

    Function:
    i) Improves vitality
    ii) Enhances better blood circulation
    Enjoy Cooking !

    Why don’t you stay with your first item since you have a ‘special’ sauce to go with the kee chang? You could share your recipe for the special sauce if indeed it is so.

    Yes.I had the cooking recipe for the Khao Niao Ma-Muang translated as Mango with Glutinous Rice.)

    I may switch to durian instead of mango if I am able to buy the v.fragrant “wong yoke kong pau” with “liquor” smell durians.

    I confirm making this dessert.

    In addition to the ‘or nee’ and calamansi chicken bites, I will also bake a chocolate banana fudge cake. Hope it will turn out ok, hahaha as it’s my first attempt at adding in the banana.

    V. Sorry for coming 1.5h late :-
    i) because my 1st. creamy sauce was being accidentally burnt while attending to other chores at the kitchen and has to be remade.

    ii) Sorry could not find good quality durians around at NTUC or Sheng Siong but had to made do with Thai mangoes and also for waiting patiently for the dessert.

    It was great having you all at my place. I was rather apprehensive about the space constraints but it was just nice. All 14 of us were all able to fit into my living room and enjoy the cool air conditioning, which was a blessing as the afternoon started off very warm but soon after became a wet one.

    We all had a great time, not only eating the fantastic spread but socialising and getting to know everyone as well.

    Andrew has taken numerous photos of the spread which I hope will be put up for everyone’s viewing and salivation, hahaha.

    Every item was yummy and I’m glad most of the remainder was ‘tar powed’, leaving me without the problem of not knowing what to do with it.

    There have been several requests for a Potluck III, so I will have to crack my head about it. Is there someone who is game to volunteer his or her home for that? Please raise your hand. If not, we could consider holding the next one in a public place like a park, but with the weather forecast of rain, it might not be such a good idea.

    So, thank you all once again and shall we make it a hattrick of successful feasting and camaraderie? :-)

    I think you will not need to crack your head to think about where to hold the 3rd pot-luck? As I mentioned to a few of the replies, shall we arrange the pot-luck III at “Marina Barrage” as an outdoor activity for year 2010 due to raining season at this moment.

    Appreciate every one of you to contribute the yummy food & I have really learnt lot of cooking techique from the pot-luck’s gathering. Once again, I would like to thanks Mary for offering her house to let us hold this event & thanks to Andrew for having taken all the photos, so that I’m able to keep the good old memories we all have shared and the delicious food we ate.

    Judy suggested a gd plc. Marina Barrage is ideal for relaxation n view besides being a gd picnic ground. If u decide to hold your party here, we the cyclists will do a ride here n picnic besides your party.

    With the year end festivities round the corner, I think Potluck III will have to be sometime next year or I will not be able to stick to my determination to lose my weight.

    I’m expecting to be pretty busy Jan and Feb 2010, so it may have to be end of Feb or sometime in March.

    Are you serious?? How do you plan to cook, then cycle and join the potluck later? Hahaha.
    It will still be a ‘homecooked’ food potluck theme and not store bought.
