Homecooked Food Potluck – Sat, 17th Oct 2009

Rosalind Lee and Mary Chan have planned a ladies only homecooked food potluck. It’s now thrown open to men.                                                            

Number of participants is limited to 20.

Participants are invited to cook a dish and share with other participants, not only the food, but their recipes as well as their cooking tips.

Dishes have to be homecooked by participants and should be enough for at least 6 – 8 persons.

Date: 17th Oct 2009 (Saturday)
Time:  5 .30 pm to 9.30 pm
Venue: Eileen Thean’s place at Chai Chee Gardens. Address will be given later

Contributions of other items like drinks, desserts and salads are welcomed but will not be considered as a cooked dish.  Plastic plates, cups and cutlery are also welcomed.

  1. Aiyoh, so many mouth-waterings dishes and soups, I cannot tahun why not let the men come also. We can help to finish the goodies and we are ‘good’ guinea pigs!

    Wat a waste if the ladies cannot eat everything because they worry about their waistlne, we men can also give belly good review!

    Perhaps you could appeal to Rosalind to include a few good men?

    Anyway, don’t worry about any wastage or our waistlines. We’ll be alright, hahaha.

    I have a suggestion. Only a suggestion mind you. I have to get Rosalind’s approval about this.

    The one who can come up with a suitable venue in the east will be included, but you will still have to adhere to the rules, which is to say that you must cook a dish too and have the recipe to share.

    Having worked in a Coffee House before and having to look after the Western, Nonya and Chinese cooks and working their shifts I have not got down to learning any dishes.

    But there something I can bake, it’s English Trifle, a combination of sponge cake, custard, fruit punch and almond seeds, do I qualify to join in?

    Yeay! We have a venue! Thanks for your offer. but before I jump to any conclusion, I’ll consult with Rosalind first, ok? I think Chai Chee Garden should be ‘east’ enough, haha.

    I also must try your Hakka yong tau foo. To be honest, I have tried the ones in the foodcourt and don’t like them as they tend to be filled with pork fat.

  7. Hi Eileen, thanks for the offer. I think it is a great idea ! Guess we should not restrict to those only in the east. For those who live elsewhere but don’t mind taking the trouble to come, we should let them, right, lor si leng?

    I am also thinking after this pot luck session, if anyone has a particular recipe in mind they want to try, then we gather everyone who is interested and have a hands-on training in someone’s kitchen. Nothing like more hands make light work !

    We can have our own healthy version of the food as outside food tends to be full of oil and fat which will end up on our waistline !

    Yum yum, looking forward to all future cooking and eating sessions !

    ….As outside food tends to be full of oil and fat which will end up on our waistline !

    Not so bad if it is on our waistline, WORSE still if it ends up wrapping our Poor heart! :
    ( Sure kena Heart attacK! )

    As such, I always try to made a point to cook my own healthy dishes if I had the time.

    While eating Yong Tau Foo 1 day , I saw one of the cooks cutting veggies to smaller strips WITHOUT even washing it and packing it into several portions.

    Imagine how much of the remaining PESTICIDE or FERTILISER residues on the leaves get into our digestive system.
    No wonder Spingaporeans has one of the highest incidence of
    CANCER in the world. :( and really wonder what Spore’s MOH is going to do about this.

    Enforce a rule to ensure that they at least wash the veggies 3 times ? and how to enforce this rule . not an easy task.

    I am keen to join the potluck, but 17 Oct is a cycling day and cycling is my passion. Yew Kwong, which month you have scheduled NO cycling huh, can’t remember……..

    Anyway, back to cooking; many people don’t really like to eat Duck. But my family members, especially my father-in –law, grand father-in-law and my aunties love to eat this “Stewed Duck” I prepared. I learned how to cook this Teochew dish from my mom. I have not been cooking this dish for many years after my In-laws have passed away. If I can join in the potluck, I will prepare “Stewed Duck”, oh…oh…..better try out this dish on one of the weekend…… :)

    Yes you’re right about our poor heart!

    Another thing to worry is also food poisoning ! I had at least 2 instances of food poisoning and that was a terrible time! And of course the recent rojak incident at Geylang Serai and all those poor innocent people! So sad.

    Well, hope that Ros will allow men who CAN cook into our potluck and want to try your Pork Ribs !

    Are you okay with Chai Chee Garden as kindly offered by Eileen Chean. Then we can open it to 20 pax. including the guys but on first-come-first serve basis.

    Just to share,last two months ago my friends and I had Yong tau Foo(YTF) at one of the food stalls. At 1st. my friend thought it was a fried piece of fried onion/garlic peeling on his YTF but it came with a “BONUS” ; upon closer examination in it was a dead baby COCKROACH with 2 tiny feelers floating on his soup.

    We complained and the stall holder gave the excuse that the baby cockroach accidentally flew into the soup while he was preparing it. He offered a new bowl of YTF to my distressed friend which my friend decline and the rest of us had lost our appetite as a result of the incident.

    So guys and gals next time when you eat outside, EXAMINE carefully before eating the food in our mouth as it may come with added “BONUSES”!

  24. Referring to the stomper article “Horrors! There’s a roach in otah” published in yesterday’s New paper….A mashed cockroach was found in a piece of otah-spicy fish paste wrapped in leaves and grilled – that was sold at a supermarket (Giant)… It was indeed disgusting and worries me for the next piece of otah im going to eat …. Arent’you ?

    Sorry dearie, but dessert is not considered a dish in this instance, that is, unless it is not a ‘simple’ one.

    Agar agar, jellies, green bean soups are considered simple.

    Kueh Lapis and Black Forrest cake for instance,are acceptable.

    A simple dessert can be an added item ok? Perhaps you could let us know what kind of dessert you intend to make?

  33. Hi Mary! After mentally going through the various dishes I usually cook (mostly normal fare), I have decided on one that I’ve more or less improved upon through the years.

    The dish that I’ll bring is my own version of Fried Rice. I’ll also bring along ‘Po Chai Ee’ in case anyone complains my fried rice gives them diarrhoea. Sorry, I can’t bring toilet paper….:p

    This will be a very interesting event indeed!

    Buah Kluak is one of my mother’s signature dish. She’s a super cook but this time round, I do not want to trouble her. We need recipes and explanation on how the dish is done and so far, I’ve eaten her Buah Kluark many times but I’ve yet to really understand how she does it.

    By the way, Mary, Saturday 17th October is a Public Holiday – Deepavali. I trust the other participants are aware of this?

    Next round of Pot Luck you can try my Buah Kelauk,I cook them for my family every Christmas..

    This round too many varieties you won’t enjoy it. Buah Kelauk must be eaten with plain steam rice and some simple side dish, otherwise the original taste will be burried.

    See lah first round bulum jadi, talking about 2nd round.
    hahaha..

    Total agree that some food is best “eaten with plain rice” or within a similar ethnic food culture setting
    to bring out the true enjoyment of the food.

    Maybe, the 2nd Potluck, we have a food theme…aka..
    Peranakan Food, or Teochew Porridge or Home-cooked healthy
    Hawker fare or Vegetarian ….etc..
    For eg.- Teochew Porridge, every participant will cook one speciality relevant to Teochew porridge, and so on.

    Let’s have a discussion during the 1st Potluck and see how best we can develope this event to become “The most popular get-together” for all home cooked food lovers.

    I’m still racking my brains what to cook for the 1st Potluck…. Nourishing Soup?….Vietnamese Food?….Cantonese Whole “Si Yow”(meaning soya sauce) Chicken?….
    Healthy Chicken Curry with no coconut milk?..Vegetarian
    dish?… sorry, Mary.. will have to revert to you on my choice at a later date.

    My apologies for not checking this thread and helping you to thank the members who are keen to join the Potluck Party. For today and tomorrow, my mother-in-law will be ‘parked’ in my home so I have to cook for her and ensure she’s okay. She has advanced dementia and her maid is fairly new. I hope I can take some time off tomorrow to check in here.

    I hear you calling but I have my reservations as I am not a confident cook. I have also been given to understand that dishes like sandwiches are classified as ‘easy’ to make and therefore does not qualify.

    As I was often ‘shooed’ out of the kitchen in my younger days, I am afraid my cooking skills are rather limited. I shall wait out my turn for the day when the ‘rules’ become more relaxed……hehe….hint hint….erh EO are you listening?

    I’m sorry I can’t help you to update your Post #1 as I get the same problems with you. In fact, when I go to the ‘Menu’ and click ‘Cooking, etc’, I get an error page. Hiazzz……

    The number of participants to date is great. Although we are opening slots to 20 pax max, with the present figure, we are already, to quote you, ‘having a banquet’! Hahaha

    My goodness! Normal buffet is 6-8 main dishes and we’re having more than 12 dishes! An Emperor’s banquet indeed!

    In your post #97, you mentioned that coming up with something unusual and different from the usual common dishes is exactly what our potluck aspires to be. Allowing SHC members to let us have a taste of how their simple dish can be improvised into a uniquely different dish in terms of flavour for example.

    I believe everyone can learn to cook and the challenge is in concorting recipes that will trademarked one’s personal version into for e.g. ‘Mary’s spaghetti’ and not just spaghetti bolognaise. That’s how individually we improve as novice cooks. :)

    I envisage this potluck as one whereby we do NOT give negative remarks about each other’s dishes as ‘One man’s meat is another man’s poison’. What we want is to expand our knowledge and skill by learning from each other. Ultimately, we will leave with more than just a full stomach after the potluck. We’ll leave with new recipes to use when we next cook for our family members or friends.

    To all who are participating, let’s enter into this effort of presenting our individual dishes without fear of discrimination but rather, look forward to a wonderful time of feeding each other and a time of comradeship.

    Rosalind, I truly agreed with the above statement.

    I do NOT follow the recipe closely.     Re: #75 & 76 . For this time, it’ll be simply ‘potluck’ which actually means a mix of everything. Next time round, we’ll set a theme to it. Then it will not be quite a potluck anymore.

    Yes, well said. ‘Constructive’ critisms are welcomed not negative remarks. We are getting together to learn from each other and you are very right in saying that we will all be heading home after that armed with various recipes and tips to improve on or vary our recipes.

    Regarding my ‘spaghetti’, it is bolognaise, but my very own version of it.
    It has occurred to me though, that spaghetti has to be eaten straight out of the kitchen, so by the time we eat it at the potluck, it may become soggy.
    I may decide on something else which will keep better. I will let you know a bit later.

    Oh, if we have 20 persons, we will be having 20 dishes! Wow! I think we will need some containers to ‘ta pow’ the remainder home, hahaha.
    So, a reminder to all participants, please cook just enough for each to have a small bite, not a big helping ok?

    The idea of this Pot Luck gathering is to socialise and shared our recipes and cooking skills.

    Just my suggestion, as such, if each of us prepared our own home cooked version of a dish in small quantity eg a big bowl for others to sample it shd be more than enough as we had in total 20 different dishes to sample and excess food from the dishes will NOT be thorwn away.

    The small sample taken from each of the dishes will pile up to become a heapful of food on a big plate.

    On your #113 suggestion of bringing enough for 6-8 persons, I think you will end up with more than you can chew.

    May I suggest the rule-of-thumb for potluck – that is to bring enough to feed just a quarter of the group at most and not more. I have learnt this through countless potluck sessions. Hence, you need not have ta pow too much of the remaining, soggy food home.

    Eating cold leftovers even after reheating can sometimes produce an antisocial outcome – gas!

    So if you don’t want to isolate yourself in a cave the next day, take heed.

    That was just a posed commercial shot.
    I cook only simple dishes like most women can, nothing great.

    While we are on the subject of commercials, I may as well tell everyone about my POSB commercial myself, before Steven comes up with another of his surprise reports.

    If you happen to drop in to any of the POSB branches, take a look at the in-house tv video. You will see me as the grandmother of a 3 year old boy, running after a ball and banking with POSB, with my ‘family’. That was shot 2 years ago and the video is now into it’s 3rd year. Some of you may have already seen it 2 years ago on Channel 5 and 8 as well as tv mobile. You will need some patience as there are several other commercials shown in rotation with the one I’m in.

    I am not a tv star. Neither am I an actress. I just got some opportunities to do some commercials which I thoroughly enjoyed shooting. I am still an ordinary person.

    I am not a very cook as you think but thanks for the compliment. I know there’s a mixed veg but mine is curry veg. It can go with rice or eat by itself. Anyway, if I change it to claypot yam rice with other ingredients, then there is fried rice. I feel there’s a difference in taste and since there are so many dishes, some can go with another rice dish. What say you?

    Back from Toastmasters meeting and playing Farmville computer game.

    Here is my Sylvia version of Cinnamon Soya Sauce chicken

    4 chicken pieces with chicken thight
    soya sauce, 10 chopped shallot, 10 garlic
    3 cinnamon stick
    3 table spoon brown sugar
    water

    In a pot add soya sauce, 10 chopped shallot, 10 garlic, 3 cinnamon stick, 3 table spoon brown sugar, 4 chicken pieces with chicken thight and water

    boil till chicken is cook and soft.

    I do agree with you that the amount each potlucker cooks should be enough for everyone to have a taste of each dish. In my personal opinion, the variations of recipes will make it difficult for us to really appreciate and savour each dish’s uniqueness so I guess we’ll just eat, exchange recipes and chit chat.

    One thing for sure is that this event will be meaningful for those of us who cook. We’ll be enriched with more recipes to cook for our family! Yeahhhh!!!!

    I decided to buy 1 kampong chicken and get the store to cut into small pieces. I dont have a standard recipe. I cook accordingly to what ingredient I have or got from the store.

    I had added chopped ginger, salt, rice wine and little seasame oil and 1 1/2 teaspoon of cinammon powder.

  130. Hi Mary Chan,

    Andrew offered me a 1/3 cup of red wine. It was sweet as DOM no doubt but did not know it has high alcoholic content. I was tipsy and my head was “v. heavy”. I chose to rest and “slept” comfortably on the chair despite all the singing and chit chatting to let the effect slowly fades off. As soon as the singing stops , I automatically woke up.And so I was still aware of the situation. He! he! :)

    So was Sylvia, who was sleeping comfortably on the sofa in the other portion of the living room. I believe she had one drink too many.

    Indeed a great tasting and fun gathering. Thk you Eileen for opening your home to us and your well taken care garden. Was such a enjoyable evening and Patrick for guitar singing session.

    For the sharing, I have appended below my corn pudding recipe.

    100g of Hoon Kueh flour
    500g of coconut mixed with 4 cups of water to squeeze out 5 cups of milk
    200g of sugar
    400g or one can/box of full whole corn kernels
    one small tsp of salt
    banana leaves for wrapping

    1) Combine coconut milk with hoon kueh flour, sugar and salt in a heavy-based saucepan. Bring to boil over low heat, stirring constantly until the mixture thickens.
    2) Stir in corn kernels and mix thoroughly.
    3) Cut the banana leaves to 11 x 15 cm and wash it with hot water.
    4) Spoon mixture into the centre of one banana leaf and fold the both ends by revering to the back.
    5) Leave to cool and refrigerate until ready to serve.

    Dan, can share your English Trifle ? Should we gather all the recipes and compile it into our 1st edition of the potluck gathering recipes book ?

    Sori I had too much drink and feeling a bit tipsy so I had a good rest at Eileen soft too.

  134. Here’s my recipe for the spicy chicken wings

    20 pieces of wing and drumlets
    half to 1 packet of curry mix depending on how spicy you want it to be. I use the precooked A1 curry mix.
    2 dessert spoonsful of brown sugar
    2 dessert spoonsful of light sauce
    1 dessert spoonsful of Japanese sushi rice vinegar
    pepper (optional)
    1 teaspoon sesame oil

    Marinade overnight

    I use the jetstream oven to grill the wings but they could be deep fried in oil.

    Try it.

    Once again I want to thank each & everyone of you for coming to my humble house….

    “WOW” what a feast we have and the merry making..the singalong, thanks to Patrick with his guitar (what is merry without music).

    I believe all of you must have put in alot of effort to cook those yummy dishes. Last but not least “Danz & Joy” both your desserts were the star of the night, being the first to finish.

    I believe the next Potluck II will be another success, I can’t join you guys this time round, will be in London during that period. Well, there will always be another time.

    Recipe for Apple Crumble

    Ingredients
    5 green with envy apples
    160g snow white and seven dwarfs sugar
    120g plain jane white flour
    60g butter fingers butter
    6 lovely cloves

    Method
    Peel, core and dice apples.
    Stew apples, three quarters of the sugar and cloves gently for half an hour till apples are soft, stirring to ensure the apples don’t burn.
    Remove cloves and put apples into baking dish.
    Mix flour, remaining sugar and butter with your fingers in a bowl until it becomes like breadcrumbs.
    Preheat oven by setting temperature at 150 degrees Celcius.
    Sprinkle crumble topping on stewed apples.
    Bake for about 30 minutes or until crumble is golden brown.
    Spoon a helping of apple crumble into a dish and serve with cream or ice cream.

    You may wish to double the amount of ingredients for the crumble if you like more of the crumble.

    Recipes for English Trifle

    Sponge cake
    4 Eggs, separated
    1 cup Sugar
    4 Tb Cold Water
    1 cup Sifted cake fluor
    1 tsp Baking powder
    Whipped cream/Sliced strawberries

    Oven Temp – 325degree Baking Time – 30 min.
    Pan Type – small angel food pan/ Preheat oven, grease a small tube pan

    Beat egg yolks and sugar together until very light. Add water. Sift together fluor and baking powder. Add to batter. Beat egg white until stiff. Fold into batter. Pour batter into prepared pan.

    Bake. Cool completely and invert onto cake platter. Prepare whipped cream and straberies. To serve, slice cake in half and fill half the whipped cream. Top with remaining whipped ceam and strawberries. (Version 1)

    Custard preparation:
    2 tablespoons custard powder mix with two tablespoons of milk
    Bring to heat 1 pint of milk, pour custard mix to heated milk, stir thoroughly and bring to a boil stirring continuosly.

    Version 2, sliced sponge cake into pieces and fill pan container,add some jam to the cake and pour custard over it and left in the fridge to set for 20 minutes. Served with strawberies and whipped cream whipping, yummy yummy!

    The Trifle I brought along is not the actual English Trifle but something I thought of. I did not bake the Sponge cake but use a shortcut. I went to NTUC and bought a ready made Pounds cake, add the custard and then the strawberries and whipped cream topping. You can also buy ready-made Pandan Chiffon cake and do the same. I named it Danz Trifle!

  138. Sorry potluckers. I couldn’t get into this thread for the past few days. Tried and tried until sianz. Well, today I got the thread so I thought I better hurry up and post my recipe here.

    ROS’S FRIED RICE

    Ingredients
    $3 prawns, shelled and diced
    $3 Char Siew, sliced and diced
    2 lean chinese sausage, sliced and diced
    1 small can of pork luncheon meat, sliced and diced
    5 eggs beaten – add a bit of soya sauce
    1 stalk of spring onions – chopped
    2 packets of mixed diced veges
    15 red shallots – grated
    3 and a half cups of rice – boiled and preferably cooled in
    refridgerator
    3-4 tablespoon of Granola oil

    Method
    a) Heat wok, add oil
    b) When oil is hot, add grated shallots and stir fry for
    a few minutes
    c) Add diced chinese sausage, then the luncheon meat, then
    the prawns
    d) Season with some salt
    e) Add cooled rice and stir fry till ingredients above are
    nicely mixed into rice
    f) Create a lobang in middle of wok and pour in beaten eggs
    g) Stir fry till eggs are evenly mixed into rice
    h) Add char siew and veges and stir fry
    i) Add spring onions

    The above is suffice for 5 adults.
    You can add/change any ingredients.

    This is a one dish meal that takes only 20 mins to cook provided the ingredients have been prepared earlier or overnight.
