  1. Hi William,

I like to give you my support, and will definitely come over when I am back.

Yours business thread is one good example which I hope to encourage within our SHC membership. At 62, your entrepreneurship needs our applause. Thank you for the discount to SHC members.

If anyone has gone to the stall, please give your feedback. Food EO Steven Chan, you now have another outlet, owned by a fellow member.

  7. Hi William

Is a welcome news to SHCians who love beef noodles, am one of them. In my Marine Parade area there are two stores selling beef noodles,
and another one at Joo Chiat Road and East Coast Road, have tried all of them. Any time passing thru Old Airport, will definitely drop in to patronise your store. BTW your store is it in the hawker ctr or coffee shop?

  8. Address sounds like the food complex with shops on the 2nd level; previously had a POSB branch there!

Remembered the good old days buying postal cheques to send remittances to England for my professional exams fees in the 70s.

Ron, there are also three/four chi char stalls (Hong Kee) there besides the famed prawn/pork mee.

  9. Hi William,

Was there last nite wif a group of SHC members after our dance at Leisure Park. We saw a beef noodle stall which is close 2 the Japanese food stall abt 2 stalls away..m i rite? Sori we didnt try ur beef noodle, we took the Japanese food.
Nxt time we will try..dat’s a promise

All the best in your business

    Cheers, Dennis

  10. Hi all!

My beef noodle is Vietnamese style, clear soup with onion base and toppings. I serve tripes/meat tendon/brisket and beef ball with thin kway teow or yellow noodle if preferred.

Mr. Andrew Kuan visited my stall today and with his suggestion, I will serve with mint leaves from now onwards if needed.

Hi Dennis, BTW, my stall nr. is #01-162, not the one you saw.

Looking forward to meeting and receiving all of you.

    Regards,

    William Seah

  11. Hi AndrewK

Thanks for the infor.,I think William must be busy mending his stall, is not far from my Marine Parade area, so I think should not be any problem to locate.

  12. Hi William Seah,

I visited your stall yesterday for lunch. I suggested that you should include mint leaves to improve on the flavour of the soup. So I think it is me and not Andrew Kuan who visited your stall yesterday.

For all SHCians, I tried the beef noodles and found the soup delicious without any strong beefy smell. The meat was soft and tender including the tripes and tendon. It is cooked the Vietnamese way. I have tried the real McCoy in Vietnam where the soup was more robust and strong (some may not like the strong beefy smell) and which suits me well since I am a lover of beef.
The stall is situated at the Old Airport Hawker Centre on the right hand side when you enter from the main entrance (facing the main road).

    Regards, Andrew Koh

  13. William,

I, agent. Celebrities come at a price.

How did you make a mistake. You can spot them from a mile. They travel with hangers-on from carry-bag, spokesmen, bodyguards, videographers to legal counsel. Call the traffic police to clear the jam.

Available in all ego sizes. Choose. Some I give-away. Bowl of free noodle OK-lah.

    Hee-hee.

  14. Hi all,

Yes, I made a boo boo about Andrew, and am sorry for the wrong identification.

    My humble apologies.

I would like to thank all the SHC members who visited my stall this evening, sorry, I ran out of beef and tow gay to provide a good meal to all my new found friends and promise to make up to you on your next visit. Do call first so that I can reserve same for you.

    My best regards to all.

  15. Dear SHCians,

Myself, Dan, Betty, Caroline, Tim and Patrick were the ones who had visited J & J beef noodles stall this evening @ 9pm, after our bowling game. Do drop by and support William, not only do you get to taste his fine ‘kway teow’ with thinly sliced tendons, you are just as pleased with William’s extremely courteous services!

With a special SHC price of $3.00, you wouldn’t want to give it a miss!

And William, thanks for your impeccable service~~ you deserve good recommendations!!

    Cheers!

  16. Hey Sue

You beat me to it. I thought I want to be the first to post – but then you are forgiven hahaha!

Yes, I would strongly recommend you to try out William’s beef noodle. I personally enjoyed the clear broth and tender beef with smooth kway teow. I love ox tripe so I requested an extra helping (of course I paid extra for it lah) and it was tender and no “smell” at all.

The mint leaves added a very nice flavour to the soup. The soup is very “cheng” and so no oily feeling after drinking.

I will definitely be going back for more :)
Good job William. Nice guy with an equally nice wife. Keep it up.

    Warmest Regards.

  17. Hi Sue & Caroline,

I thank you both for your support and positive comments on my beef noodle.

Service is one thing everyone deserve to have when you pay to buy something, I myself do not favor rude sales personnel or counter staff, hence, my main objective is not to do it onto others.

Once again, as a new entrepreneur, I will strive to bring service and quality food to whoever patronize my stall.

    Thanking all again in advance.

    Best regards,

    William Seah

Note: We are close on 4, 5 & 6 May for washing up by the authorities.

  18. Hi William,

Your noodles that u mention is kway teow or is it pho ?

Will made a point to eat at yr stall if I happen to be near there.

Vietnamese Beef noodles is less spicy than Thaksin Beef noodles sold at Clementi.

    SC

  19. William,

Fantastic, sounds like the feedback on your Vietnamese style beef noodle is good. I luv beef noodles, and am coming tomorrow (5 May 2008) at 1pm.

Tell us, where did you get the experience of making Vietnamese beef noodles? And, how come you can find time on the internet?

    Terence Seah

  20. Terence

In case William doesnt see your posting #24, pls see William’s posting #5 about the shop’s closure on 4, 5 & 6 May for cleaning up pf the food centre by the authorities.

The shop will be open on 7 May. Sorry just kaypoh only.

  21. Hi Caroline #25,

Very kind of you to “kaypoh” or else I shall make the trip to old airport road tomorrow, and nothing to eat. Am back for 9 hours, and thought I can relish all that have been reported. Two weeks time then. Thanks again.

    Terence Seah

  22. Hi Caroline,

Thank you for informing Terence about my stall’s closure dates otherwise he would be there and disappointed.

Hi Terence, don’t worry, the next time you are going there, call me to let me know so that I can keep some beef for you.

Making this style of beef noodle comes from my own trials and error, did not get it from the internet.

    Regards,

    William Seah

  23. “I have tried the real McCoy in Vietnam where the soup was more robust and strong” But AndrewKoh, it wasnt the usual beefy KT that you ate in Vietnam. There, they put a buffalo, robust & strong, into the giant pot to swim as they slowly heat up the fire. At the end of 7×7 days you get the vietnamese beef K-T.

Anyone who cant tell that William’s beef comes from virgin cows has to be very buffalo.

Btw, William, think it’ll make more heads turned if you add a bit of color to your stall – make it brighter with lights and perhas put a cow there : a depiction, not the real thingy.

  24. Tim

    “put a cow there”

I like your marketing strategy…even a small to medium figurine of a cow would be a great visual advertisement! ;-)

  25. Hi Tim n Jonathan

One cow figurine is not enuf. Perhaps 2 is ideal. One Cow Pek n One Cow Bu. Tis will gv consumers more choices of meat. How abt some souvenirs like horns, leather bags, wallets n purses 2 entice patronage?

  26. Well, I dont hv cow figurine in mind. If it’s not cute, why put it there? If it is, William will hv to walk the battery-operated cow home everyday lest it be stolen, and it’s no good to add in battery cost for a start-up.

YK’s suggestion is workable. For a start, William shd consider selling the beef balls – solid and succulent which, in my case (I fished 3 out to take home that nite) was also used as ammunition to hit those damned crows. The balls dont kill- too cruel if they do – but enough to make the black birds carry the orr bak kak for a month. Pick up the beef balls, wash them and it’s great food again.

  27. THANKS William. The block 51 is recently renovated. More spacious and airy. Plenty of good food there, so it is very competitive selling food there. All the best. We (family and I) will certainly try your stall if there, among other favourites…heehee.

SHC members get a discount – does it include all the cab drivers with number plates SHC ?? ha ha..

  28. Hi,

This is to inform all that my stall is now opened for business as usual after the ‘Spring Cleaning” by the authorities.

Kindly note that we are close on every Monday.

For those who are coming to try out my beef noodle, may I suggest that you please call to check first before rushing down to avoid disappointment.

This is to ensure that you get what’s worth as I do run out of beef and tow-gay like last Saturday.

Thanking all in advance for your support.

    Regards,

    William Seah

  29. Dear William

Thank you for our fellowship yesterday’s morning at your stall.

I noticed that there is a stall selling exclusively crocodile meat.

All the best to your business at the Old Kallang Airport food complex.

    Cheers,

  30. Also, do join us at any of the meaningful and friendly activities, William and Mrs Seah:

    3) Durian and Serendipity Trail (31 May)
    4) Pot-luck Fellowship by the poolside (14 June)

Please see details from the relevant subject threads.

    Warmest regards

  31. Hi AndrewK

Understand that you have patronized William’s beef noodle stall yesterday at the Old Airport, have you also tried the “lor mee” at the same place, recommended to you?

    RonLai

  32. Yes, Ronnie.

I had the privileges of eating a) William’s beef noodle for brunch, and b) lor mee, c)a sample of Robert’s kway teow and d)ice kachang for lunch in one morning.

I walked around the hinterland which I had spent my childhood days with many friends of yester years. Met some old old neighbours and several friends who went there for lunch.

It was yesterday(s) once more !

    TY for your recommendations.

    Cheerio!
